È una caratteristica... non un bug.
Le statistiche della tabella vengono memorizzate nella cache. Per disabilitare la cache e avere sempre l'ultima versione è necessario modificare a 0 la variabile server che indica la durata della cancellazione della cache:
SET PERSIST information_schema_stats_expiry = 0
Il valore predefinito di questa proprietà è cambiato in 86400 (24 ore) in Mysql 8.x
